Easy Crab Chowder Recipe

This homemade Crab Chowder Recipe is creamy, rich and hearty. The perfect meal for a cool afternoon or a cold night, and great to pair with homemade biscuits for a filling and comforting meal!

Why You’ll Love this Crab Chowder Recipe

We love seafood, likely because we grew up on the ocean and enjoyed so much of it growing up.

A couple of years ago,  I wrote about Graham’s crab harvest from the waters off of Prince Rupert. So here’s a great recipe for Crab Chowder. Graham’s a fisherman from way back and he loves being out on the water and has missed ocean fishing.

This recipe is so filling and satisfying and has lots of great flavors from the crab, the bacon, and all of the vegetables. It goes great with fresh biscuits or bread and is sure to warm you up right away!

How to Catch Your Own Crabs

If you have access to ocean waters, get out there and get started. Drop a crab trap in waters that are from 30 – 75 feet deep. You can easily get crab with a 12 foot aluminum boat, especially if you are in a bay or harbour where there aren’t rough seas.

Once we get the trap pulled out of the water and into the boat, it’s time to sex the crab. Females are put back in the water and any male keeper crabs have to be 6 1/2″ minimum in width.

You can tell males from females by the V shape on the underside of their body. Males have a lighthouse shape, whereas females have a wider – more of a beehive shape.

Since Graham was able to limit out on crab, we were able to have a delicious dinner and still have crab left over. It didn’t take him long to get the idea for making a Chowder.

He decided to spend part of the morning in the kitchen and got the rest of the crab shucked. And yes, buy crab crackers! Even if you only get to enjoy crab a few times a year, shuckers are worth it! If you get two, you can share them around the table.

Then he started improvising a recipe for a pot of Crab Chowder. Here is what he came up with (and it was really good!)

 

Ingredients Needed

  • crab – 1 is usually enough, but feel free to add more if you like!
  • bacon – pairs great with the salty, creaminess of this chowder
  • garlic – we used four cloves, but adjust to your liking.
  • celery
  • onion
  • butter
  • flour – ensures that your chowder gets nice and thick.
  • milk
  • potatoes
  • salt and pepper – you can include other seasonings if you like, but salt and pepper are a good starting point.
  • bay leaves – if you include bay leaves, be sure to remove them before serving.

 

How to Make Crab Chowder

  1. Dice 6 slices of bacon and fry lightly using either a deep fry pan or a large pot. Add 4 cloves of minced garlic.
  2. Chop up a small onion and a few pieces of celery to add, if you like. Add 1/4 cup butter and sautee for ten minutes. Sprinkle in some quick flour and stir until it starts to thicken.
  3. Add 1 1/2 quarts of milk, put on medium heat and stir frequently.
  4. While this is thickening, dice up 4 medium size potatoes and put them in a fry pan or saucepot. Barely cover with water and boil until the potatoes are soft. Most of the water will evaporate; then add the potatoes and the small amount of remaining water and to the bacon, garlic, flour and milk mixture.
  5. Add the cooked crab and some salt and pepper to taste. A couple of bay leaves are a good addition, but be sure to remember to remove them before serving. If the chowder is too thin, add a little more quick flour.
  6. Simmer on medium heat, until thickened. Stir occasionally.

 

This is a wonderfully hearty meal, especially wonderful on a cold winter day. Serve it up with some freshly made biscuits and a salad and you’ve got a healthy dinner. Enjoy!

Crab Chowder

Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

Comfort food at its best. A perfect meal for a cold Fall evening, alongside fresh hot biscuits.

Ingredients

  • 1 cooked crab, add more or less depending on what you have
  • 6 slices bacon
  • 4 cloves garlic, minced
  • 2 stalks celery
  • 1 onion
  • 1/4 cup butter
  • quick flour, for thickening
  • 1 1/2 quarts milk
  • 4 potatoes
  • 1 tsp salt
  • 1 tsp pepper
  • 2 bay leaves

Instructions

  1. Shuck crab and cut into small pieces.
  2. Fry bacon; add garlic, celery and onion.
  3. Add the butter and saute for 10 minutes.
  4. Sprinkle in some quick flour and stir while the sauce thickens.
  5. Add the milk and stir, allowing it to thicken. Cook on medium heat.
  6. Meanwhile, boil the potatoes. When soft, add them to the sauce. Add some or all of the leftover potato water as well.
  7. Add the cooked crab. Season with salt and pepper to taste.
  8. Add the bay leaves and allow to simmer. 
  9. Once thickened, remove bay leaves and serve the chowder along with hot biscuits and/or a side salad.

Whether you serve it as a spread or a dip for vegetables, it makes for the perfect snack or starter. Plus, it only takes 4 ingredients, so the prep couldn’t be easier.

Why You’ll Love This Creamy Feta Dip Recipe

Any fan of feta cheese or garlic will absolutely adore this dip, which is perfect for an afternoon snack or to serve before a delicious dinner! And feta cheese is good for you, with with lots of phosphorous and calcium for bone strength!

Ingredients Needed

  • fresh garlic – I used 4 cloves, but you can use less if you prefer a more subtle taste.
  • mayonnaise – serves as the base for this dip and gives it a creamy consistency.
  • Feta cheese – salty and cheesy, this gives your garlic spread some extra bite.
  • red bell pepper – provides some variety in color and pairs perfectly with the garlic and Feta.
  • black pepper – you can eyeball how much pepper you use depending on how flavorful you want your dip to be!

 

How to Make Feta Garlic Dip

  1. Mince the garlic using the food processor and then add the feta cheese and mix it together well.
  2. Then, add the mayonnaise and mix.

    Be sure to give this a good blend in the food processor to ensure everything combines well and the flavors meld!
  3. Add the red pepper and then the black pepper.
  4. Mix it all together well.
  5. Done! Serve in a bowl with some good quality crackers. A nice glass of red wine goes great alongside. We enjoy our own Homemade Rhubarb Wine with this appy.

 

Pesto Tips and Tricks

  • I use my KitchenAid food processor for this recipe. If you don’t have one, you can use an immersion blender. Or, finely mince the garlic, feta and red pepper by hand. The smoothness of the consistency won’t be quite the same, but it will still be delicious.

  • Use any leftover spread within a couple of days – it is not meant to be kept for a week. That’s why the recipe is made in a small batch.
  • We used 4 large cloves of garlic with this recipe, but the first time you make this Feta Cheese and Garlic Dip, you may want to use less garlic. Even cut the amount in half and use 2 cloves of garlic.
  • Feta cheese tastes quite strong and along with 4 large garlic cloves, this appy had a really strong zing! Great for us, but it may be a bit much for you and your guests. Start with less garlic if you’re worried and add more if you think it needs it!
  • No need to refrigerate the dip after making. Just make it and serve it immediately. Refrigerate it if you like – not a problem. 
  • Serve with your favorite crackers, pita chips (or pita bread toasted in the oven). You can also pair with slices of veggies like red pepper, celery, carrots.
  • Spread this whipped feta dip on sandwiches, burgers, or on top of toasted bread rounds to make garlic feta crostinis!
  • Store any leftover dip in an airtight container in the fridge; it will last 4 – 5 days.

 This cheesy garlic dip is a fantastic appetizer to serve alongside crackers or vegetables, or with a glass of good wine.

Popular Variations and Substitutions

  • Instead of mayonnaise, sour cream or Greek yogurt can be substituted. For an even thicker dip, you could even use cream cheese.
  • Use roasted garlic instead of fresh; the dip will have less of a bite, but we still find it delicious.
  • If you find the dip is too thick, add a drizzle of olive oil to thin it out.
  • For some flavor variation and to make things pop, add a drizzle of fresh lemon juice or a teaspoon or so of lemon zest.
  • Serve alongside some crusty bread or pita wedges. 
  • Though the feta will already add lots of salty flavor to your dip, you can always add some more salt to taste.
  • Stir in some tomatoes, parsley, red pepper flakes, olives, oregano, thyme or fresh dill for even more color and flavor!
  • For garnishes, use fresh herbs, sesame seeds, some extra virgin olive oil, a sprinkle of pine nuts or more red peppers.

Feta Cheese Garlic Spread Appetizer Recipe

Yield: 6 people
Prep Time: 15 minutes
Total Time: 15 minutes

Quick to make and delicious! The strength depends on the amount of garlic you use.

Ingredients

  • 4 cloves garlic, (use less if you wish)
  • 1/4 cup mayonnaise
  • 200 grams Feta cheese
  • 1/4 cup red bell (sweet) pepper
  • pinch black pepper

Instructions

  1. Mince the garlic finely in food processor.
  2. Slowly add the feta cheese and mix.
  3. Add mayonnaise and continue mixing.
  4. Add red pepper and black pepper.
  5. Mix all ingredients well.
  6. Transfer to a serving dish.
  7. Serve with good quality crackers.

Why You’ll Love this Pasta Recipe

Pesto pasta is a versatile and flavorful dish that is so easy to make! Even if you don’t have garlic scape pesto, you can make this pasta with the pesto of your choice and it will still turn out delicious. You can add hot Italian sausages or chicken for a meal with more protein, then serve with a side salad and enjoy!

 

Ingredients Needed

  • butter – makes the sauce flavorful and gives it a buttery consistency.
  • flour – help thicken the sauce.
  • salt and pepper – can be adjusted to taste.
  • milk – ensures that the sauce maintains its creamy texture.
  • cheddar cheese – makes your pesto pasta creamy and cheesy.
  • pesto – you can use whatever kind of pesto you have on hand; this recipe will turn out great every time!
  • pasta – almost any kind of pasta can be used for this recipe, but I went with farfalle (or bowties!)

 

How to Make Pesto Pasta

  1. Melt butter in saucepan, then whisk in the flour. I like to keep it on the heat so the sauce starts to thicken right away.
  2. Add salt and pepper, whisking constantly.

    Be sure to really let your cheese melt and incorporate into the sauce.
  3. Let it thicken a bit (keep stirring!) then slowly add the milk. Stir it constantly and once it is as thick as you like, turn down the heat.
  4. Add the cheese and then the pesto and stir that in. Keep warm and stir every once in a while.

  5. Meanwhile, boil water for the pasta. We like using colourful pasta but any good quality pasta will work. One day I will finally try making my own fresh pasta.
  6. Start adding the pesto cheese sauce to the cooked pasta. You might not use all of the sauce, it depends on how much pasta you have cooked. Leftover sauce can be used over meat in another meal. Or try it on homemade Eggs Benedict – delicious.

    You may not have to use all of the sauce you’ve made. Be sure to combine this well so all of the noodles are well-covered!

And…there’s dinner! It was delicious and didn’t take long to prepare. A great meal after a hard day of work.

 

Variations and Serving Suggestions

  • Adding something like chicken or turkey is a great way to make this pasta an even heartier and more well-rounded meal.

  • Serving a salad on the side also provides even more nutrients and is the perfect pairing with this delicious garlic scape pesto pasta!
  • I used farfalle for this recipe, but you could do penne, rigatoni, rotini, or even a longer noodle like spaghetti. This pesto cheese sauce tastes good on everything!

Pesto Pasta

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

We love using Garlic Scape Pesto for this dish, but if you can't find any, use any kind of Pesto you like.

Ingredients

  • 2 tbsp butter
  • 2 tbsp flour
  • 1/8 tsp salt
  • dash pepper
  • 1 cup milk
  • 3/4 cup cheddar cheese
  • 3 tbsp pesto

Instructions

  1. Melt butter in saucepan, then whisk in the flour.
  2. Keep on the heat so the sauce starts to thicken right away. Add salt and pepper, whisking constantly.
  3. When mixture thickens, slowly add the milk while stirring.
  4. Keep heating and once thickened, add the cheese.
  5. Add the pesto.
  6. Meanwhile, cook noodles then strain well.
  7. Stir the pesto sauce into the cooked noodles.

Original Fantasy Fudge Recipe (10-Minute Fudge)

This Original Fantasy Fudge Recipe is the perfect 10-minute fudge, great for holidays, gifts, or just when you need something quick, rich, creamy and chocolatey!

Why You’ll Love This Fantasy Fudge Recipe

Every year I make this special original recipe Fantasy Fudge for the holidays. This recipe is most popularly found on the back of the Kraft marshmallow creme jar. It’s fast, it’s easy and it’s my oldest son’s absolute favourite. Plus, you don’t even need to break out the candy thermometer.

It only takes 10 minutes to get this sweet treat ready, then just let it cool. Once it’s set, you can slice it up; small pieces work better. This is a sweet sweet fudge.

My son always gets a batch of this chocolate and marshmallow fudge wrapped up as a Christmas present! Give it a try, I hope you will enjoy it.

Looking at the list of ingredients almost gives me a heart attack. This is so far removed from the way we usually eat. Good thing this recipe only comes out at Christmas. This 10-minute fudge is oh so delicious. But not healthy. Not at all.

Ingredients Needed

  • sugar
  • butter (or margarine)
  • evaporated milk – one of the reasons your fudge will get nice and set up.
  • chocolate chips – you can use whatever kind you like depending on your taste! I used semi-sweet chocolate chips for this fantasy fudge recipe. Tollhouse is what’s recommended for the true original fantasy fudge.
  • miniature marshmallows or marshmallow creme – gives your fudge a light creaminess and adds some sweetness too. The miniature marshmallows are one of the things that makes this original fantasy fudge recipe so unique and tasty! Kraft and Jet make a great marshmallow puff, but any brand will do.
  • chopped walnuts – provide some added crunch and flavor.
  • vanilla extract – the type of extract can also be varied to your taste!

 

 How to Make 10-Minute Fudge

  1. In a large saucepan, add the sugar, butter and pour in evaporated milk. Turn your element onto medium heat.
  2. Stir the sugar, butter and milk and mix them together.

    Be sure to stir this often so your mixture won’t burn or stick to the bottom of your pan.
  3. Bring the mixture to a boil. When it starts heating up, make sure you stir it the entire time it is cooking. You don’t want it to start sticking to the bottom of the saucepan.

    Ensuring that all of these ingredients incorporate well is the trick to good fudge consistency!
  4. Once the mixture is at a full rolling boil, set the timer for 5 minutes. Keep stirring constantly; the mixture will begin to thicken. You may need to turn the heat down a smidgeon; you don’t want the mixture burning on the bottom. That’s why you need to stir the whole post constantly while cooking. And the more it boils, the more you need to be constantly stirring.
  5. Remove from the heat and add the chocolate chips. I use the semi sweet chips because we like our fudge chocolatey. If you like the taste of mint, you could use half chocolate and half mint chips.

  6. Add the jar of puffed marshmallow creme, stir it again until the mixture is nice and smooth. Get all the marshmallow melted and mixed in.

  7. Add the chopped nuts and the vanilla and stir until smooth. I only had whole walnuts on hand so I put a handful of nuts in a baggie and crushed them with my rolling pin. Worked like a charm!

  8. Spoon the mixture into a greased 9-inch by 13-inch baking dish (or a square pan) and pat the layer smooth using a spatula or wooden spoon. Milk chocolate will give you a supersweet fudge, semisweet chocolate chips make for an extremely chocolatey option, and something like mint chocolate chips will completely change the flavor of your fudge. A more bittersweet chocolate can also be used for a super decadent and rich finish.
  • Different extracts can also be used instead of vanilla. Almond extract, hazelnut extract, or even something fruity like a citrus extract will give you entirely different varieties.
  • Change up the kind of nuts you use or add a couple kinds! Almonds, peanuts, pecans and hazelnuts would all be fantastic in this fudge.

Cook Time: 20 minutes
Total Time: 25 minutes

Decadent and fattening. Makes 3 lbs. - every single one of them guaranteed to land on your hips.

Ingredients

  • 3 cups sugar
  • 3/4 cup butter
  • 2/3 cup evaporated milk
  • One 12 oz, 350g bag of chocolate chips
  • One 7 oz, 198g jar Marshmallow creme (or 10 ounce bag mini marshmallows)
  • 1 cup chopped walnuts
  • 1 tsp vanilla

Instructions

  1. Combine the sugar, butter and evaporated milk in a large saucepan
  2. On medium heat, bring it to a full rolling boil, stirring constantly
  3. Continue boiling for 5 minutes, keep stirring all the time so the bottom doesn't burn!
  4. Remove from heat and stir in the chocolate chips
  5. Once the chips are melted, add the jar of marshmallow crème
  6. Add the nuts and vanilla and stir well
  7. Stick your finger in there. Taste it a bit to be sure it tastes right. If anyone catches you, just tell 'em it's quality control
  8. Pour into a greased 13 x 9 inch Pyrex dish.
  9. Cool at room temperature, then cut into squares
