Last week, I wrote about the beginning of the Rhubarb Harvest here. Today, I picked another huge laundry basket full and brought it up to the kitchen. It took about an hour to get it all washed and chopped in 1/2 inch chunks. I’ve added it up and we have brought in a total of 85 pounds so far!
I think we are on track for getting about 150 pounds of Rhubarb this year. Amazing that we started with 3 plants about 6 years ago! For a perennial food source, Rhubarb is excellent. Very prolific, extremely low maintenance and very good for you.
Rhubarb is high in fiber and low in carbs. It also has Vitamins C and K, calcium and potassium. Plant one this year!
